My Garden of Eve Salad
Last night I made a stir fry straight away with my bok choi, and today I’m onto salad!
This has Eve’s lettuce, snap peas, radishes, and a hard boiled pastured egg.
I added a few baby greens from the Brooklyn Grange (courtesy of the co-op buying club last week), a carrot, and some quinoa.
Topped with salt and pepper, olive oil, and balsamic vinegar.
So far I have to say my favorite thing has been the sugary-sweet snap peas. My boyfriend on the other hand will eat all the hot radishes in one sitting if I don’t watch him.
